Recipe for Swabian Spaetzle / Knoepfle-Noodles
Ingredients:
250 g flour
2 eggs
1 teaspoon salt
1 teaspoon oil
1/8 liter of water
For lubricating:
1 tablespoon
butter
1 tablespoon
breadcrumbs
Beat these ingredients well until batter shows air bubbles. On moistened Spaetzle Lid deposit a part of the supple dough. Now scrape the dough into a high pot with boiling water.
Tip: Do not place the lid completely so that the water vapor can escape. It is also helpful to rinse the Spaetzle Lid between cold water and to lift the lid for scraping the dough drops on the underside.
Spaetzle are done when they come up to the surface. Remove with large strainer spoon and put in colander. Keep spaetzle warm and repeat process until all dough is gone. Top spaetzle with in butter browned breadcrumbs.
Tip: For a richer taste substitute the water in the recipe with eggs, but make sure that the dough does not become too tight.
